I would say it is primarily the loudness of the event that prevents one from hearing any mic-generated noise. The advertised S/N ratio on these Roland Binaural mics is: "Greater than 60 dB" which is pretty vague.
When the drag cars were running flat out, some of those sounds would distort the mics briefly as the cars passed, but I was typically far enough away that this didn't happen.

Wow, sounds nice! Do these mics really have little self-noise? or did you do some processing/cleaning of the track? Or was it just very loud ambience?

This is perfect, clean as it is loud...
